german chocolate jump cake

there are few things in life i love. one is baking. love, love,love. so does my waist unfortunetly. heres another yummy request. this ones for you tanya;)


300 degree oven

2 cups chopped walnuts or pecans
1 bag of coconut ( i used sweetend)
1 can coconut juice
1 package betty crocker gf choco cake mix

icing
1 stick butter melted
8oz creamcheese
1/2 box powdered sugar

mix 1st 3 ingrediants & pour into 9 x13 greased glass pan
mix cake acording to instructions( i used 2 eggs not 3. worked just fine)
pour over top of last three things
melt butter, add cheese & sugar. beat the bajeebees out of it. i place it in the microwave to liquify it a bit. try to pour over cake. spread it out as best you can. bake 300 oven for 70 mins. the center may fall when cooled but thats ok.

do dah puyallup!!!!!

i love fall!! the leaves change, the weather change, the smell of fried everything in the air. thats right.... its also fair time around these parts!!! now, my husband & i love to spend one whole day at the fair. from the time it opens till the time they kick us out. we dont do rides, or stand in crazy long lines for some silly biscit & jam. (gf or not!!)( 1.25 a scone..... thats crazy) anywho!!!! we go to see everything & eat other things. well, this year marks my 2nd birthday being gluten free. the first year we went i really wasnt sure why we were even there. i couldnt have anything but an ear of roasted corn for 3 bucks. the funny thing about that is ive been holding out on corn on the cob in stores till it went back to 10 ears for a buck. that hasnt happened in over 10 years. the closest i got was 5 for a buck. anyway, back at the fair......theres this thing i can have, im all excited, im ready to plunk my well earned bucks down when the love of my life says.....you wont pay $1 for 5 ears but youll pay $3 bucks for 1????!!!! im not going to lie.. my heart broke right there. he was right. couldnt do it. ( he has since regretted saying that :) ) we left the fair early last year. i was done. maybe this fair thing just isnt for gluten free foodies. yea, the horses, pigs, seeing my dad sell metal detectors is a huge part of goin to the fair, but the food!! come on!!! the food!!!! well, this year ( with much reluctense) we went. first people in the door we were so early. we looked at stuff, bought a new flag for the home, he (hubby) got a free scone, then came lunch time. we grabbed dad & went to bbq petes. i can eat there. bbq is safe & yummy. good too. thats all fine & dandy. about an hour later john asks how im doin. i tell him im starved!! no good!! the hunt begins. do we dare try this, well, how bout that??!! i figure ill just take deep breathes & maybe itll go away. 730p.m. nope. still hungry. tryed soft serve. that was nice but no quite it. john jumps up & practicly yells POPCORN!!!!! ok, i can have that. still not it thou. & then i spot it!! the thing i know i can have, the thing that i have got to have now!!!!! the largest plate of nachos ive ever seen!!!!! sammy hagar is about to take the stage (we arent there for him but we are under the grandstand were lots of food places are) its quiet at the booth. i walk over. the girl behind the counter smiles. i say, i would never do this if you werent dead, not that your dead. she understands. i tell her im gluten intolerant, does she know what that is. she smiles & says" your gluten free. i work at a bakery at fred myers & i know all about you" i about passed out!! i know, that sounds funny but if your like me, that fact she even knew what i was , how i have to be & she cared??!!!! you know!!!! she went over everything with me. the chips, how they were done, the seasoning for the burger, everything. i paused, looked at my husband, looked back at the girl. i ordered!!!!!& i ate til i was so stinkin full ( what was the name of the rat in charletts web??? templeton!!!) thats how i felt. it was the best!!! i was greatful!!! happy, excited!! & so was my hunny. yep, you too can eat at the fair. be cautious of course. always listen to that little voice. & live a bit!!! i love the fair again!! we stayed till close. walked the four blocks back to the truck happy, full & tired as all get out. it was a great day!!!!!!

gf biscuits, the cheddar kind

i love these things so much that i have eaten most of the batch, myself!!!& no, i felt no guilt!!! enjoy.
makes 12
2 1/2 cups gf bisquick
3/4 cup cold whole milk
1/2 stick cold butter
1/4 tsp garlic powder
1 HEAPING cup of grated cheddar cheese
combine bisquick & butter with a pastry cutter ( 2 knives work too) untill crumbly. add cheese, milk, & garlic. mix by hand. if you find its just not sticking together very well, add a smidge more milk. drop onto cookie sheet. bake 15-17 mins.
then take
2 tbls butter (melted),
1/4 tsp parsley,
1/2 tsp galic powder,
& a pinch of salt.
melt & mix together, brush tops of yummy biscuits with all the mixture. eat them all (well, share some with a friend or two if you gotta)the bisquick i get @ walmart for about 3.98. & it generally takes the whole box to make one batch of these yummy things. i try to buy 2 boxes when i can. it just doesnt last around here.

gluten free flour blends i use

i do a lot of baking around here so i definetly need to be able to have what ever it is i make. the blends i use are easy & pretty economical. i also found them in a couple real good magazines i love. Delight gluten free & Living without. both are awesome reads. ok, so heres the first Vanessas all purpose gf flour
2 cups brown ( or white) rice flour
3/4 cup corn starch
2 tblsp tapioca flour
1 tsp xanthan gum
combine all. mix well.i make up a bunch of batches & put it in an airtight container & put it in a freezer. i use it just like i would reg flour. i buy the rice, tapioca flours & corn starch in bulk from WinCo in the bulk section (of course) excellent pricing. the xanthan gum ( pronounced zanthan) i also buy in bulk but at marlines in federal way. its very expensive in the little container otherwise. im not certain if the one here on 38th has it in bulk. price wise tho... WinCo for the other stuff. i use this mix for my scones, breads, that sorta stuff. i dont use it as a thickener. for that i use cornstarch or sweet rice flour. its sold in a white box in the asian section of stores. the second one i have can also be used for scones, cakes, muffins. just work with them. the rice is a big sucker of fluids & ive found that i might need to add a small bit more of water.
self rising gf flour blend
1 1/4 cup sorghum flour
1 1/4 cup rice flour
1/2 cup tapioca flour
2 tsp xanthan gum
4 tsp baking powder
1/2 tsp salt
same as with the other flour. mix well. again, i make a few batches & freeze it till i need it. the sorghum flour i get at any store by Bobs Redmill. hes got some pretty good stuff. when baking or cooking, remember, take all ingredeants out & let them all reach room temp unless like with scones the recipe tells you different.i prefer the first flour mix the best myself. but, play with them & find out for yourself. & remember, you can use these flour mixes just like reg flour. even in reg recipes. you have my permission to play with your food!!! its ok!! & if it doesnt turn out, well, try it a different way then. i still cant do cookies on my own.
another thing. i dont remember if i ever told you, these flours are not wheat flour. dont expect them to ever be like wheat flour. the taste, texture, how they work, nothing like wheat. i have found that once i got that into my brain, it all worked out for me. they remind me of something gourmet that i would find at say, pike place. its different here, but not unabtainable. & they are good tasting too. different but good.

im trying something else new, recipes!!!

crust popovers
pre heat oven 425. put muffin pan in oven. very important you do this. 4 eggs, 1 cup milk. pulsate in a blender. 1/3 cup tapioca flour, 2/3 cup rice flour, dash of salt. add all this to blender & pulsate some more. take pan from oven, spray with non stick spray, fill cups about 3/4 way full. should make 12. bake for 25-28 mins. DONT OPEN OVEN TO PEEK!!!! take them out & eat them all. now, they might be a bit doughy in the middle. thats fine. soppose to be that way.
ok, where did i get this stuff??!!! win co has a fab bulk section. they have the white rice flour & the tapioca flour. great prices too!!! you can also find corn starch & different kinds of sugars. be sure to check how the bins are at win co, one of mine has over head bins. these are great. less likely to have contamination. the other win co has floor bins. these are fine except that they are placed under over head bins with bread crumbs. some people just dont know, ya know? ok, anyways, enjoy!!!

getting to eat pizza!!

ive been able to have pizza but to be able to have great pizza at my fav place? well thats just priceless!! casa mia in lakewood has introduced gf pizza! our fav is the chicken & 3 cheese pizza with cashews! over the top! my husband was in heaven tonight as he enjoyed his reg pizza crust & i also rolled my eyes a time or two being able to have the same pizza but gf. owners gerald & jamie have it goin on! im tellin you! safety & my well being are the priority here! jamie is talking about getting gf deserts from granny lala in. the chocolate gnache is incredable i hear. havent had that one yet & im looking forward to being able to. this isnt our first time in. we got to go at the beginning of summer i guess when we first heard about the new crust. we facebooked them a couple times & i guess we are referred to as the face book couple. thats kinda cool! the best part for me is being able to once again thank the Lord above for giving me another choice to eat & have fun. this is one happy princess;)

i did it!

yep! i can now do this from my phone! im excited. well, much has been going on. ill tell you about the last great thing. i had mexican food!! but not just any mexican food. gf mexican food made just for me at a wonderful place called Santiagos Gourmet Mexican Restaurant in yakima, wash. the owner, Jar, made my dinner himself. it was so great.he switched the normal glutenfull sauce out for a roasted red pepper white sauce. he gets this gf thing. he does the best he can & it shows. no side effects!!! he understands the cross thing. doing all in his power. go! this place is great!!
